SODA BREAD

This is easy to make and does not take long to bake. It’s a nice change to eat with soup or cheese.

Ingredients:

  • 350g (12oz) plain white flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 rounded teaspoon bicarbonate of soda
  • 110g (4oz) wholemeal flour
  • 25g (1oz) butter or white fat
  • 300ml (10 fl oz) buttermilk

Method

Heat the oven to Gas 6 / 200C and flour a baking tray.

Into a bowl sieve the white flour, salt, sugar and bicarbonate of soda. Add the wholemeal flour.

Rub in the fat. Mix to a soft dough with the buttermilk, adding a little extra milk if necessary.

Knead lightly on a floured surface but do not over handle.

Form into a round about 18cm / 7in in diameter. Place on the baking tray and brush the top with milk. Slash a cross in the top.

Bake for approximately 25 minutes or until firm and it makes a hollow sound when tapped on the base.

This is good served warm.
