MEATBALLS WITH TOMATO SAUCE AND PASTA

Serves 4 approx.

I think the homemade version of this is much better than that which you buy ready-made and you can alter the flavours to suit your taste. Both the meatballs and the sauce are very simple to make. You can alter the quantities for larger or smaller meals. You will need a liquidizer or hand blender for the sauce.

Ingredients:

Meatballs

  • 250g (8oz) mince
  • 40g (1 ½ oz) fresh wholemeal breadcrumbs
  • 1 small onion – finely chopped
  • ½ tsp mixed herbs
  • ½ tsp cumin
  • 1 small egg
  • 2 tablespoons oil
  • 2-3 tablesp flour

Tomato Sauce

  • 1 small onion – finely chopped
  • 2 tablesp oil
  • 1 can chopped tomatoes
  • 1 tablesp tomato purée
  • 1 teasp dried basil
  • ½ teasp chilli flakes if desired
  • 1 teasp sugar
  • Salt and pepper

Pasta (tagliatelli)

  • Approximately 50g (20z) per person

Method:

Meatballs

In a large bowl combine the mince, breadcrumbs, onions, herbs, spice, chilli if used, and beaten egg. Season with salt and pepper.

Bind all together with a hand.

Form into 12 meatballs with floured hands. Chill for 1 hour.

Fry in the oil over a low heat, turning until cooked through.

Tomato Sauce

Fry the onion gently in the oil until soft but not brown.

Add the tomatoes, tomato purée and herbs.

Liquidize until smooth.

Add the chilli flakes if used with salt and pepper.

Pasta

Cook the tagliatelli according to the packet instructions.

To Serve

Put the pasta on the serving dish with the meatballs in the centre. Pour some tomato sauce on the top and sprinkle with grated parmesan cheese.

Use either one large dish or individual bowls.

Note: the meatballs can be frozen in an airtight container for up to 2 months.
